Carrageenan production

Carrageenan is produced from red algae of the genus Chondrus, which grows in the Philippines and is similar in appearance to parsley. The plant is cut when it reaches a weight close to 1kg. They are then dried and sent to a factory processing plant. There, the algae is sieved on a sieve, washed with water and treated with a hot alkaline solution to extract the liquid phase. The resulting solution is then evaporated and dried.

Transport and storage requirements:

Carrageenan in industrial production is packed by the manufacturer in multilayer paper bags. As It is recommended to store it in closed storage rooms, protected from moisture and light.

Carrageenan is recommended to be transported by covered railway or motor transport, in compliance with the norms and rules of cargo transportation, operating for these types of transport.

Carrageenan is a natural food additive E407, a monosaccharide polymer or high molecular weight carbohydrate. It is a natural stabilising component and gelling agent. Carrageenan is produced from red seaweed of the genus Chondrus, also called “Irish moss”.

The consumption of carrageenan by the food industry is so large that it has led to the development of red algae farms all over the world, certainly in places with suitable climatic conditions. For example, the Philippines, Ireland, France, Indonesia, South America and Canada.

Carrageenan is a natural gelling and thickening agent. Its properties are partly similar to those of gelatin, but of vegetable origin.

The largest share of carrageenan use is in the dairy industry. It is used in formulations:

  • condensed milk and condensed cocoa
  • mousses and puddings
  • cream of vegetable origin
  • ice creams
  • toppings
  • melted cheeses and soft cream cheese
  • dry milk concentrates
  • milk and chocolate desserts

Carrageenan allows gel formation, obtaining the desired structure and shape of the product. In addition, it controls and eliminates spontaneous release of liquid from gels and jellies and reduces their volume. Carrageenan is also able to retain moisture and extend the shelf life of products.

Carrageenan is used in the production of minced meat and fish, hams, sausages, pates, sausages and cold cuts.

Instructions for use of carrageenan:

Carrageenan gelling starts in the temperature range from 40°C to 70°C. The general dosage is 5-10g per 1kg.

To improve the structure density of the final product, 0.2 to 0.5% of the total weight of the gelling agent is added.

Carrageenan in the cosmetics industry

It is used to give a gel-like structure to cosmetic products. In addition, it serves as a moisture retaining component and has skin softening and moisturising properties. It is also added to creams, shampoos, hair conditioners and toothpastes.
