Xanthan gum is a natural polysaccharide and is a natural food additive E415. Otherwise called corn sugar gum, xanthan, xanthan wax, xanthan gum, xanthan gum, xanthan. is a natural polysaccharide obtained by fermentation of the bacterium Xanthomonas campestris. Its chemical formula is (C35H49O29)n. It is used in food production as a thickener, stabiliser, encapsulation agent, in cosmetic industry it is used as a moisturiser. To obtain xanthan gum, sugar syrup is fermented with Xanthomonas campestris bacteria. After fermentation is completed, ethyl or isopropyl alcohol is added to the solution to extract the gum in the form of a precipitate, after which the resulting precipitate is filtered and dried

Xanthan gum properties.

Xanthan gum is a tasteless and odourless powder of white or grey colour, well soluble in water. Gum dissolves well in water, milk, salt and sugar solutions in a wide range of acidity and temperatures. Xanthan gum is virtually unaffected by acids (except hydrochloric acid), alkalis, salts and high temperatures. Xanthan gum exhibits the properties of a good thickening agent, and when combined with other thickeners (such as carob gum) it acquires the properties of a gel-forming agent.

As a food additive E415 is used in the food industry in many countries. International standards for food products (Codex Alimentarius) allow the use of xanthan as a thickener and gelling agent in 11 food standards.
The use of xanthan gum significantly reduces moisture loss during the manufacture and storage of various products. It is also used to obtain a stable, thick and viscous consistency in various products, especially those with a high salt and acid content.

Dosage of Xanthan gum in the manufacture of:

  • various sauces – 0.1-0.3%
  • mayonnaises – 0.2-0.5%
  • ice-cream – 0.1-0.3%
  • yoghurts – 0.05-0.3%
  • sour milk products – 0.05-0.3%
  • jams and marmalade – 0.2-0.4 per cent
  • bakery products and confectionery products – 0,05-0,25%.

The dosage is approximate and can be changed in accordance with the recipe.
