KMC or food additive E 466 in the food industry is an effective and most popular thickener. It stabilises the consistency and structure of the product and improves its taste.

Cellulose gum dosage for production:

• confectionery mastics – 1-8g/kg
• jams and confitures – 1-3g/kg
• juices with pulp – 1-3g/kg
• sauces and ketchups – 3-8g/kg
• sausages – from 2g/kg
• semi-finished products – up to 4g/kg
• alcoholic beverages – 1g/kg
• dairy products – up to 5g/kg

The dosage depends on the desired consistency and may vary depending on the recipe.

In pharmaceutical production
